In the waffel vs. pancake thread Euda posted a recipe for Finnish pancakes. i was instantly attracted to the idea of trying the recipe being a fan of both Finland an breakfast foods.

this thread documents my attempt at Euda's recipe, i submit it to you OI for your pleasure.

Recipe
2 cups milk
1 cup flour
2 tbsp sugar
¼ tsp salt
1 tsp baking powder
2 eggs
1 tsp vanilla

here we see from left to right salt, baking powder, sugar an flour. i added these to a mixing bowl an stirred them up a bit

and our wet ingredients. i just added these right into the bowl with the dry

then it was just a matter of mixing the goodies together. this batter is very runny, so dont worry if yours turns out that way

i let the batter rest overnight per Euda's suggestion. that was the easy part.

the next morning i decided to cook these up while my girlfriend slept. hopefully you can learn from my first mistakes.

using a hot well buttered skillet put in a little bit of the batter. making sure to leave yourself plenty of room to work the spatula. these suckers cook quick so as soon as you see the edges brown an the bubbles form flip them over.

i took me a few tries to get the method down but once you figure out how quick they cook an proper flipping technique it becomes quite easy. just allow for one or two to get slightly fucked up in the learning process

the recipe made 15 crepe like pancakes, not accounting for the two lost for science. i served them with blackberry preserves an butter.

my girlfriend an i loved them. i forgot who said it but chicks dig crepes.

I suck ass at making pancakes but am attempting to improve my technique.

My waffles are great, though.

If it's like crepes, it might be worth a try. Crepes rock.

I tried them out and they were pretty swish. I do prefer waffles though.

I'm looking for a good traditional pancake recipe. Like the kind you make in a cast iron skillet and bake in the oven and it's delicious.

I made a pretty good one a couple months ago but it was really eggy in consistency.

I hope someone knows what I'm talking about and has some input.

try this recipe out. i like it, and i think it is what you might be going for.

5 eggs
1 1/2 c. milk
1 c. all-purpose flour
3 tbsp. granulated sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 lb. butter
2 to 3 tbsp. light brown sugar
1/2 tsp. salt

Preheat oven to 425 degrees. In a large bowl, mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. the batter will remain slightly lumpy, this is ok.

Melt butter in a 12 inch oven safe dish or a 13 x 9 inch baking dish. Next pour batter in. Then sprinkle with brown sugar. Bake in middle of oven for 20 minutes or until pancake is puffed and brown. Serve immediately for best taste. Leftover pancake can be reheated in oven. Delicious with whipped cream.

This should make 6 to 8 individual cakes.
