You probably don't want a churchy answer, so I'll spare you one.
I need a belief because nothing I
know gives me an adequate view of reality. So I believe in one - but in believing I simultaneously claim that (a.) something is as I believe it is and (b.) that I might be wrong.

Why can't people admit that they do not know what happens when you die.

Probably because the thought of death and their ultra-allegiance to a particular religion scares them away from facing reality.
But when you believe, even in God, you realize you might be wrong. Ultimately, even the most enlightened Christian will tell you he doesn't know for certain.

Many are, both religious people and non-religious.
I'm not.

Prove it's a lie and we'll talk.

You're repeating yourself. Ask some new questions.
